Lemon Rasam:

After all these festivities and indulgence, our digestive system surely needs some soothing, healing and a simple lunch. This lemon Rasam surely fits the bill and we can enjoy this Rasam with some hot rice, vegetable Subzi and little pickle. This time I had some huge lemons from my native. which we call as Dudle huli /Citrus medica. This Rasam is very good for treating sour throat as well. You can enjoy this as a soup and heal the throat pain.

Ingredients-

Toor dal – 1 cup (cooked)

Green chillies – 4

Ginger – ½ inch

Hing – Toor dal size

Salt

Jaggery – 1 table spoon

Curry leaves – 1 spring

Lemon juice – ½ of big lemon or 1 small lemon

Seasoning:

Coconut oil – 1 tsp

Mustard – 1 tea spoon

Cumin – ½ tea spoon

Red chilli – 1

Curry leaves – 1 spring

Method:

-Chop green chillies, cut ginger julienne and keep.

-Take Four to five cups of water in a pot, put ginger, green chillies, curry leaves, salt, jaggery, hing and cook for a while.

-When ginger and green chillies are cooked, add cooked dal and adjust the consistency, check for salt and jaggery.

– Boil for 3 to 5 minutes and switch off. Now add lemon juice by removing the seeds if any.

-Do the seasoning by heating oil, add mustard and splutter. Next add cumin, broken red chilli and curry leaves and mix all these and add this over ready boiled Rasam.

Close the lid and rest this for 10 minutes to absorb all the flavours and then serve.

 

Lemon pudding cake with Fresh Strawberry Sauce:

Soft, melt in a mouth citrusy warm pudding is paired with fresh strawberry sauce. It is a real treat in winter evenings. The basic recipe is from here and I adapted it according to our taste and availability of the ingredients.

Ingredient:

All-purpose flour or Almond flour – ¼ cup

Salt – one pinch

Lemon zest – from one lemon

Eggs -2 (separated)

Butter- 1 tablespoon

Sugar- 2/3 cup

Buttermilk – 2/3 cup

Lemon juice – 2 tablespoons

For Sauce:

Strawberries- 20

Sugar – 2 tablespoon

Method:

  • Combine dry ingredients in one bowl. i.e. All-purpose flour, salt, lemon zest and mix this nicely by using a dry wire whisk.
  • Preheat oven at 160° C . Keep cookie tray inside by putting water. So that the water bath will be ready to bake while preheating.
  • Take 4 pudding moulds and apply some butter or oil and keep aside.
  • In another bowl, beat egg yolks, buttermilk, lemon juice, sugar. Beat until well mixed.
  • Add dry ingredient content to this and keep aside.
  • In another bowl, beat egg whites until you get stiff peaks. It takes almost 2 to 3 minutes of beating.
  • Combine this with a pudding mixture by folding gently by using a wooden or plastic spatula.
  • Divide evenly by filling this into 4 pudding moulds.

  • Bake these filled cups in a hot water bath for 40 minutes or until the top becomes light brown.
  • After placing the cups, check for the water level in the cookie tray (water bath). If it is less, please fill it with little hot water and close the oven door.
  • When it is done, remove from the water bath and cool those cups.

  • Now you can make strawberry sauce or Compote :
  • Chop all the strawberries, Mix in sugar and keep aside for 5 minutes. Churn half of the content in a mixer jar and keep another half as it is. So that you will have some chunks in your sauce and it looks good as well OR to make the compote, cook all these until syrup become bubbly and cool before serving it. 
  • For serving, invert the pudding on a serving plate and pour some strawberry sauce and enjoy.

Note: To invert the pudding, you can use a small knife at the edge and it will release itself from the sides.

Butterfly pea flower and Lemon grass tea:

Two months back, when I was going through some articles, This article about Butterfly pea flower tea and its benefits attracted my attention and I tried my hand  it by preparing and experimenting, and my family loved this tea very much and now I want to share this recipe  with my readers too.

Butterfly pea flower, name itself is so exotic isn’t it? It is nothing but our wildly grown “Shankha Pushpa” flower. In Kannada Shankha means Conch and Pushpa means flower. This flower is widely used in making exotic teas, edible colour in Thai cuisine. Normally we find two colours in this, white and ink blue.

If you use blue flower for brewing, tea becomes pink after adding lemon juice.

Here I have used white flowers and some fresh lemon grass from my garden. When we use white flower and lemon grass, the tea becomes golden yellow. If you add lemon juice for additional flavour, it changes its colour to transparent, like normal water.

This tea is fragrant, at the same time it is filled with so many good anti-oxidants. Over all it is one Exotic drink.

Now we will see, how I prepared it,

Ingredients:

For one big glass:

Water – 1 big glass

Butterfly pea flowers – 7 to 8

Lemon grass – 4 stalks

Sugar – 1 tsp

Lemon – ¼

Method:

-Collect fresh flowers, wash; chop lemon grass into 1 or 2” size pieces.

– Put water, lemon grass and flowers together and boil, until lemon grass changes its colour.

-Strain and add sugar or honey, whatever you prefer. You can use artificial sweetener as well.

-Your Exotic tea is ready to have, Pour into a serving glass.

-If you would like to add a little sourness, add lemon juice and see the magic. Golden tea will become transparent and glossy.

-Have your dose of antioxidant in this chilled weather and enjoy.
