Raw /Green Tomato Chutney:

Green Tomatoes are firm, unripe and tangy compared to Ripened Red Tomato. Green tomatoes are rich in nutrition and antioxidants.

Raw/Green tomato Chutney makes a delicious accompaniment to South Indian breakfast and is easy to make. When I have homegrown tomatoes, it is a must condiment in our household. Today, I am sharing our favourite, much-loved recipe with you all.

Here is how to make it,

Ingredients:

Raw/ Green tomatoes – 4 to 6 (depending on the size)

Oil- 1tbl sp

Cumin – 1tsp

Garlic cloves – 10 to 12

Green chillies – 4 to 5

Puffed chana / Hurigadle/ Pappu – 1 tbl sp

Coconut – ½ cup

Coriander leaves – 2 tbl sps

Salt

Method:

-Take one tawa, heat one tbl sp of oil, then cumin, chopped green chillies, garlic and roast. Then add chopped tomatoes and fry until it wilts by adding salt.

-Switch off the gas when tomatoes wilts, add puffed chana and coconut and fry for 2 minutes. Cool the mixture.

-Grind this by adding coriander leaves. Enjoy with Dosa, Rotti or idli.

Huchellu Chutney :

If you are wondering what exactly it is? Wait! It has some more names, such as Gurellu in Kannada and Niger seed in English. They are used extensively in the North Karnataka region.

Niger seed or Huchellu is filled with many nutrients and is the best Omega 3 natural supplement for vegetarians.

I made Huchellu chutney with Ragi Rotti, considered the best combo in Bangalore.

Ingredients:

Chana dal – 1 tsp

Urad dal – 1tsp

Peanuts – ¼ cup

Hurigadale, roasted gram – 2 tbl spoons

Green chillies – 2 to 4

Garlic – 4 cloves

Curry leaves – 4 leaves

Coriander leaves – little

Salt and tamarind little

Roasted niger seeds or powder – 1 tbl spoon

Fresh coconut – 2 to 3 tbl spoons

Method:

-Heat little oil, roast chana dal, urad dal, and peanuts. Add roasted gram, green chillies, and garlic cloves and fry further.

-Switch off the gas, add curry leaves and coriander leaves, and toss a little to wilt the greens; cool.

-Grind the content to smooth paste by adding coconut, salt, and tamarind.

-I don’t add any seasoning. If you wish to add it, please go ahead and add it. Serve with Ragi rotti.

Menthe Idli /Fenugreek sweet idli:

We Indians do not need any introduction for methi. Methi seeds are an integral part of our day to day cooking and has an important role in our cooking, even though it is used in a minuscule portion.

Fenugreek or Methi is a power packed, nutritionally rich and produces heat in our body. Hence, the usage of methi is recommended in winter months to keep our body warm and disease free. Traditionally methi has been used as a seed as well as greens. It plays a main part in post-partum/ after delivery diet of Indian ladies. It is believed that it helps in breast milk production.

Today, I am going to share our age old, traditional recipe, which I used to relish during my childhood.

It is a semi sweet idli and tastes really good with methi flavour and is usually served with coconut – ginger chutney, to give it a bit of a kick.

Ingredients:

Dosa rice – 2 cups

Methi – 1 fistful ( approx. 2 tablespoons)

Jaggery –  2 / 2 block  ( according to the taste)

Poha – ½ cup

turmeric powder – 1/2 tsp (optional)

Method:

-Soak methi and rice separately for 4 hrs , after washing it properly.

-Grind methi into a fine paste, by adding sufficient water.

-Add soaked rice into it, add salt, jaggery and grind, until rice turns into small grainy texture. Like a small rava consistency.

-After grinding, remove the batter, it should be a little watery. Now add turmeric, poha into the batter, mix properly, leave overnight or until it ferments. It takes a little longer in cold regions.

-Next day, mix nicely, make idlies in an idli mould, like a regular idli.

-Serve with coconut – ginger chutney.

Chutney in brief: Fresh coconut, roasted red chillies, fresh ginger, little tamarind, and salt.

 

Coconut-Fresh Coriander chutney (Grandma’s style)

One more recipe from Smitha, dear friend of mine.  which I always relish with Oats and rava idli is age old recipe of her grandma. Though I have done little changes to the original recipe, taste wise it is the same and if you like khatta meeta chutneys, this is for you to enjoy with vegetable Oats rava idlies or plain oats – rava idlies or Rava idli with oats.

Ingredients

Fresh Coconut, shredded – 1 Cup
Fresh Coriander – A little more than half cup
Green Chilies – 4 to 6

Tamarind – Size of a Gooseberry
Hing – ½ tsp
Jaggery – 1 & 1/2 Tablespoon
Oil – 2 tsp

For Tempering: Oil, Mustard, Curry Leaves

Method

-Soak tamarind and jaggery in little bit of water to make it soft.

-Heat a pan. Add oil, Sauté the green chilies, until the outer skin looks partially white. Add the coconut and give it a mix. Once the coconut has turned warm, turn off the flame. Cool it.

– In a blender jar, put this mixture, along with tamarind-jaggery mix, hing, salt, fresh coriander and blend into smooth paste by adding water.

-Do seasoning, by heating oil, splutter mustard add curry leaves and add  ground paste, boil for 2 minutes.

-Cool and serve with Oats Rava idli. This chutney stays good for couple of days, under refrigeration.

Veg Momo With Chilli and Peanut Chutney:

Should I say, Momo’s are everyone’s favourite or teenager’s favourite 😉 .

 If you have teens at your house, you can relate to me 😀 . Yes, it is the easiest, cheapest and tummy filling, in their language, it is healthy too 😉 . My daughters were missing their friend group as well as their usual outing to eat Momos with 3 dipping sauces 😀  I had the recipe of Momo as well as an easy chutney recipe ,which I had noted down during our Gangtok trip from a couple of local people there.

Tried my hand at an elaborate procedure and felt happy to see a happy face as well.

You can prepare chutney in the beginning and keep it ready, before making momos.

For Momo: It gives around 15 momos

At First: Outer covering/Dough:

Ingredients:

All-purpose flour – 1 cup

Salt

Oil – 2 sp

Water – to bind.

Method:

-Take a flour, add salt, oil. Rub for a while and make a pliable dough. Cover with a wet towel and keep it for rest, while preparing stuffing.

Second: Inner stuffing:

Ingredients:

Cabbage – 1 cup (grated)

Carrot – ½ to 1 cup (grated)

Onion – 1 (chopped)

Ginger – 1 tsp (grated)

Salt

Method:

-Mix everything, keep aside for 5 minutes. Drain all the water, which oozes out by holding/ placing in your palm , folding, and squeezing properly.

-Drain the liquid and keep it ready.

Final step: Folding and steaming

-Take ready dough, take a small portion , make a ball, apply little oil to flat surface as well as to wooden roller.

-Prepare a small disc by rolling, place a little filling at the centre. You can then either close it by folding like how I did . (Lift one side make pleats and fold to the other half and seal the edges OR gather all around and close it at the centre top like a cone.)

-Prepared Momos  should be under wet towels to avoid any dehydration.

-After making some , you can start to steam, by placing it in an idli /Momo steamer. Line the steamer either by spreading banana leaf, parchment paper/ butter paper or by oiling.

-Steam for 10 minutes and serve with any kind of chutney or sauce.

Now we would see how to make,

Hot chilli Chutney and Peanut Chutney to go with steamed momos:

It is sort of a one by two preparation. At first, we are going to make chilli chutney, divide into half and add roasted peanut to one half, grind and make really tasty additional dish.

For Chilli Chutney:

Tomatoes – 4

Red Byadagi chilli – 4 to 5

Garlic cloves – 5 to 6

Roasted sesame seeds – 2 tablespoons

Salt

Method:

-Take a half cup of water, boil and add red chilli, halved tomato, and boil for 2 more minutes.

-Remove outer skin from the tomato , cool.

-Take a mixer jar, powdered sesame, add peeled tomato, cooled red chilli with water, salt and grind smooth.

-It is our Hot Chilli chutney.

For Peanut Chutney:

Roast fistful of peanuts, cool and powder it. Add half the quantity of chilli chutney , little salt, and grind into paste. Voila!!! Your two sides are ready to indulge .

If you like Mayonnaise ,fill the third cup and indulge 😊

Note:

Don’t discard  the vegetable water, which can be used while kneading the dough for any kind of roti’s. 

If you want to serve these momo’s to any kind of parties, prepare before hand, keep inside the fridge /freeze, steam on that day, before serving.

Mango ginger Thokku:

Masala Dosa:

Who doesn’t love Masala Dosa? It is an absolute favourite in our family.

A properly made crisp Dosa is very delicious if the batter is perfectly fermented with little sour flavour and correct consistency.

Normally Masala Dosa can be served either by applying Red chutney or Green chutney.

Red chutney what I make is not very hot and made with only chillies. It is coconut-based garlic flavoured chutney.

In other hand, green chutney smeared Dosa is something I relish in Hotel MTR outlet in Bangalore. I tried to replicate the taste at home, and it is once again a coconut chutney, which is flavoured by coriander leaves.

In our coastal region, you never get to see red chutney applied Masala dosas. It is normal paper plain Dosa with bhaji at the centre and rolled like a paper roll and served with the watery ginger chutney and sambar as an accompaniment.

In our house we normally make red chutney and apply and enjoy garlicky flavoured chutney with aloo masala.

First, we will see How to make Dosa Batter:

Ingredient:

Dosa rice -1 cup

Idly rice -1 cup

Urad dal – ½ cup

Bengal gram/Chana dal – 1 tbl sp

Fenugreek/methi seeds – 1 tsp.

Beaten rice – ¼ cup

  Method:

-Wash all these ingredients couple of times.

-Soak this in a sufficient water (washed rice and dal should submerge) for 3 to 4 hours. Drain water from the rice and keep aside. This water is used while grinding according to the requirement. Grind soaked rice –dal mixture by adding salt in to a very fine /smooth batter by using wet grinder or Mixer grinder. I prefer Wet grinder and it certainly gives much finer, perfect batter. After removing the batter adjust the consistency by mixing properly. Now keep this ground batter for fermentation in a big vessel, so that it will allow room for puffed/fermented batter. It will take anywhere between 8 to 16 hours (according to the outside weather)

Note: In Bangalore I usually soak my lentils around morning, grinding happens around afternoon 2 to 3 pm and until next morning I keep the batter for fermentation. This is how I get my perfectly fermented batter. 

Potato Bhaji/ filling:

Ingredients:

Potato – 6 big

Onion – 3 big

Green chilli – 2 to 3

Grated ginger – ½ “

Turmeric – ½ tsp.

Salt

Seasoning: Coconut oil -2 tbl sp, mustard- 1tsp, Urad dal -1 tsp., chana dal-1 tsp, Cumin seeds – ½ tsp, hing – ¼ tsp, Red chilli -1, curry leaves -2 springs.

Chopped coriander leaves for garnishing.

 Method:

-Wash potato cut in to half and put this in a cooker with sufficient water. Cook for two whistles. Cool, remove outer skin, mash and keep aside.

-Slice onion and slit green chillies.

-Take one kadai, add coconut oil, mustard, when it starts to splutter, add cumin, hing, Urad dal, chana dal, red chilli. When dal becomes red add Curry leaves, slit green chillies and onions.

-Add turmeric and fry onions till it becomes light brown.

-Now add one to two cups of water, add salt.

-When water starts boiling add mashed potato and mix nicely. Check for the seasoning and close the lid and cook for a while until it becomes homogenised and water drains.

-Switch off the gas and garnish with chopped coriander leaves.

 

Red Chutney: It is garlic flavoured very thick coconut chutney.

Ingredients:

Grated fresh coconut – 1 cup

Red chilli – 2

Garlic cloves -7 to 8

Tamarind – ¼ tsp.

Salt

Method: Roast Red chillies by putting ¼ tsp of oil.

Put all the ingredients together in a mixer jar, dry grind at first and then put very little water and make very thick consistency. This chutney is used for applying over the Dosa while making.

 

Green chutney: This chutney can be smeared as well as served as an accompaniment with Dosa. If you are smearing, keep the consistency little thick and if you are serving as a side, you can add little water and make it thin.

Ingredient:

Grated fresh coconut – 1 cup

Roasted gram/ puffed gram – ½ cup (putani or Hurigadale)

Green chillies – 3 to 4

Tamarind – little

Sugar – ½ tsp

Salt

Coriander leaves – 1 small cup

Curry leaves – 1 spring

Method:

Fist grind coconut, puffed gram, salt, tamarind by adding little water. Then add chopped coriander and curry leaves and churn a little and add seasoning with mustard and curry leaves.

 

White Coconut Chutney: This is served as a side dish and usually with ginger flavour.

Ingredients:

Fresh grated coconut – 1 cup

Green chilli – 1 or 2

Tamarind – ¼ tsp.

Salt

Ginger – ½ “     

Method: Grind all these by putting sufficient water and adjust the consistency. Do seasoning by putting coconut oil, mustard, red chilli and curry leaves.

 

How to Prepare Masala Dosa:

Now everything is ready, and we can proceed with our preparation.

-Keep the Dosa griddle over the gas stove for heating. You can use Iron griddle or Non-stick one.

-Nicely mix fermented Dosa batter and check for the consistency. If it is thick add ½ cup of water and adjust and keep it ready.

-When Dosa tawa becomes hot, pour one serving spoon of Dosa batter, move spatula in to a circular motion and spread the batter.

-sprinkle little ghee /butter/oil and cook until it is little brown in a low flame.

-when it is light brown spread Red garlic chutney or Thick green chutney at the centre of the Dosa in a circular motion and keep one serving spoon of potato filling at the centre and fold.        

-Now serve this ready Masala Dosa with White coconut chutney and Enjoy.

 

 

 

Surnoli: (Bread dosa/ Buttermilk dosa)

Surnoli is a traditional breakfast recipe of south canara; it is also called as bread dosa or buttermilk dosa. This is usually prepared if you have left over buttermilk or curds in excess. Usually we make this by adding jaggery.

Here I am giving both sweet and normal dosa version.

Ingredients:

Dosa rice – 3 cups

Fenugreek seeds – 2 tsp.

Beaten rice /poha – 1 ½ cup

Salt – to taste

Buttermilk /curd – 2 cups

Grated coconut – from half coconut or 2 fists full.

Eno fruit salt – 1 tsp. each (for sweet/normal version)

Grated jaggery – according to taste (2 to 3tbl sp) (For sweeter version)

Turmeric powder – 1 tsp. (for sweeter version)

Method:

  • Wash dosa rice, fenugreek and beaten rice twice; discard water. Pour curds and soak this for 3 to 4 hours.
  • Grind this in to a smooth paste by adding coconut and salt to an idly batter consistency (little thicker than normal dosa)
  • If butter milk is very sour add milk while grinding or else you can add water too (if batter is too thick)
  • Now divide this batter into two, take out one portion of batter into a steel vessel in which you keep it for fermenting. This is our normal dosa batter.
  • For sweeter version, add turmeric and jaggery to the mixer jar and grind until it is homogenous.
  • Remove this batter to another vessel and keep it for fermentation.
  • Next day morning add 1 tsp. Eno fruit salt to both the batter and leave it aside for 10 min.

  • Make a dosa by pouring one serving spoon of the batter on hot iron griddle, don’t spread.
  • You will see thousands of holes on upper surface, smear with butter(Vegan’s can avoid) and cook this in a low flame by closing it with a lid.
  • Cook this dosa only on one side and don’t flip.

    -Spongy bread dosa is ready to serve and indulge in it with homemade butter or any chutney. Here I have served this with Onion-coconut chutney.

Ubbu Rotti : ( In a Traditional way)

Made Ubbu Rotti for today’s lunch, one of the most laborious and very tasty dishes of south canara region. It is a simple rice flat bread and made by soaking Red rice. This is an age old, gluten free and healthy flat bread.

Ubbu Rotti is made as well as served in different styles. Each household has their own method even though the basic ingredient is the same Red rice which is also known as boiled rice or Kerala Matta rice.

In our household we make the Rotti by soaking Red rice and Idli rice in hot water and ground to smooth batter with salt. The ready batter is then cooked on a low heat to make a dough. Then it is pressed into discs by keeping in-between the two plantation leaves. In our native, people use clay tawa to cook the roti. I normally use my Iron Roti tawa. After cooking on both the sides, normally in villages, we put it on “Kenda” (hot burning firewood) to puff up nicely. Here I normally use direct gas flame to do the same. It is low in calorie as well as very healthy and tasty.

While serving, some families prefer chutney and some Malabar spinach gravy. It depends on one’s family preference. In our household, my Mom used to serve Garlic or Onion chutney and Mom -in -law used to serve with Raw mango chutney.

I have mentioned that it is laborious at the beginning itself. You must be thinking by now, why? It is very simple and straight forward and sounds easy as well. I am telling you, it is one of the most difficult recipes to master! Because it needs a lot of patience and time. Roti cooks really slow and vanishes very fast as well 😉 Once you get a hold of it, you can make it very easily. So, if you attempt and practice you will get the hang of it and can make easily.

Ingredients:

Boiled rice – 1 cup

Idli rice – 1 cup

Salt

Coconut oil – to apply

Method:

-Wash rice and soak it for one to two hours by adding hot boiling water and close the lid.

-Grind into smooth batter by adding enough water.

-Cook the batter( I normally add 1 tsp of coconut oil to batter to enhance the taste)  until it forms a dough consistency.

-Take out and cool a little and start making the discs.

-Take small banana leaves, wash and keep it ready as well as a roti presser or two wooden planks to press.

-Take a big lemon size dough and knead a little and form a round shape.

-Take one banana leaf, place it on a roti presser. Place the dough roundel over it and close it with another leaf and press the presser. If you are using plank, do it exactly like this by using the plank.

-Heat the griddle, place the discs (including banana leaf) over the hot iron griddle. Cook in a medium heat.

-Flip the sides couple of times, when roti cooks, leaf will become loose and at that moment, remove the leaf and discard it.

-continue to cook the roti, until you see the light brown spots. Now it is the time to place it on the direct fire and do it. Some would puff, some would not or partially puff.

-That is it. Remove, apply some coconut oil and enjoy with Onion/garlic chutney or Raw mango chutney or Malabar spinach curry.

 

 

Moringa / Drumstick leaves chutney and Rice:

Nugge Soppu ,Moringa or Drumstick leaves are a power house of nutrients.  Back in 2016 I had tried a bunch of drumstick recipes to publish in Vijaya next kannada daily. This chutney recipe is from that trial and after that it is in my regular menu and I have made it many times, as well as tried to mix this same chutney into cooked rice after doing some seasoning and liked it a lot and It is an awesome way to feed small kids with added goodness of moringa.

I will first describe how to make chutney and at last I will add the procedure of rice as well.

This chutney stays good for up to one week and we can store this in a refrigerator and can be enjoyed as a side dish or make rice item and relish and can be packed as a carry meal in a tiffin box as well.

Procedure for  Chutney:

Moringa leaves – 4 cups (keep aside some young leaves for seasoning)

To be ground:

Roasted red chillies – 3

Black pepper – 3

Garlic – 10 cloves

Tamarind – ¼ tea spoon

Coriander leaves – 3 table spoons (chopped)

Cumin – 1 tea spoon

Jaggery – ½ to 1 tea spoon

Salt

Seasoning;

Oil – 2 table spoons

Mustard – 1 tea spoon

Curry leaves – 2 strings

Garlic – 10 cloves (chopped)

Onion – 1 (chopped)

Turmeric – ½ tea spoon

Method:

-Take moringa leaves (keep aside a little) and grind with all the items under “To be Ground” from Roasted red chillies to salt in the list by adding little water into coarse paste.

-Now take one kadai, do seasoning part. Heat oil, splutter mustard, add curry leaves, chopped garlic, onion ,turmeric and fry until onion and garlic becomes light brown.

-Add moringa leaves, which we have kept aside and fry till it wilts and add ground paste and fry for 3 to 5 minutes or until raw smell vanishes and mixture changes in colour.

-You can serve this as a side dish with hot rice and ghee. This chutney stays good under refrigeration and can be used as a moringa rice mix as well.

Now we will see the procedure for Moringa Rice:

It is simple. Take some oil and put one tea spoon of cumin, little curry leaves and one or two table spoons of ready chutney, little salt and mix nicely. Switch off the gas. Mix required amount of ready cooked rice in this mixture and mix nicely to devour aromatic moringa rice. If you have ready chutney around, it is a quick recipe.
