Steamed Modaka / Steamed Rice dumpling with Coconut Jaggery filling:

Ganesha Festival aka Vinayaka Chaturthi is the time, when we indulge in so many varieties of traditional delicacies- Genasale, patholi, Chakkuli or Chakli– to name a few. Two varieties of Modaka (steamed and deep fried) Panchakajjaya, Halittu (nothing but rice noodles), Guliyappa are the main things which we normally find in our region.

Ganesha has one more name as a “Modaka Priya” means, he loves to eat Modaka. Steamed medakas are also known as Ukkarisida Modaka / Ukdiche modak in India.

Which is ground rice batter, which is cooked until it reaches a ball form and kneaded and stuffed with a coconut jaggery filling and steam cooked.

Some people or in some region, people do use rice flour, instead of soaked and ground batter.

Now a days, people make various kinds of modak from, khoya, chocolate, dry fruits etc. But traditionally it is done in this way.

Procedure goes like this –

Ingredients:  

Dosa rice /white rice – 2 cups

Grated coconut – 1 cup

Grated Jaggery – ½ cup (to taste).

Ghee/ Clarified butter – 4 tsp.

Salt to taste

Modaka mould – (optional)

Method:

-Wash rice and soak it for 2 to 3 hours.

-Grind soaked rice into smooth paste by adding water and salt.

-Now keep thick bottomed kadai, pour the ground batter and add some water to make thin consistency.

– Now add 2 tsp of ghee and start heating this mixture by continuous stirring. When it becomes little thick and forms a mass, switch off the gas and keep it aside to cool.

-When it is ready to handle, knead it further and form a smooth dough.

-Cover the dough with wet cloth, to retain moisture.

In the meantime, make sweet coconut-jaggery mixture. In a thick bottomed vessel add jaggery and ½ cup of water and heat. If you find some impurities in jaggery syrup, sieve this liquid and heat further and add fresh grated coconut and cook until it is sticky and forms mass. Add remaining ghee to this and mix. Now stuffing is ready.

Method to make Modaka by using mould-

-Grease the mould by using ghee.

-Take a lemon sized dough at a time, knead a little and use.

-Close the mould, apply the dough all around the mould, fill a tea spoon of coconut jaggery mixture by leaving very little place at the neck of the mould.

-Now take a tea spoon of dough and seal it. Now Stuffed Modaka is ready.

-Proceed until all the dough is over and arrange all these medakas in an idli steamer.

-Steam cook for 15 to 20 minutes.

 

If you are using Rice flour or Modaka flour:

Ingredients:

Rice flour – 2 cups

Water – 2 cups

Salt

Ghee – 1 tea spoon

Method:

-Boil water by adding salt, ghee in a thick bottomed pan.

-When water starts to boil, add rice flour and keep in a simmer for 5 minutes.

– Switch off the gas. After some time, knead the dough and follow the same procedure as above. 

-While kneading, if needed , sprinkle some hot water and proceed.

-Proceed until all the dough is over and arrange all these medakas in an idli steamer.

-Steam cook for 15 to 20 minutes.

Note:

-If you don’t have Modaka mould, take a lemon sized dough, make a 4” disc by using your thumb and fore finger of both hands.

-Keep this in your left palm, in a cup shape, put filling (smaller in size) and cover it. Arrange all these medakas in an idli steamer.

-Steam cook for 15 to 20 minutes.

 

 

 

 

Walnut – Chocolate chip Coffee Cake:

Coffee flavoured cake happened by chance. I had some unused Nescafe instant coffee and wanted to finish it ASAP. So, I thought of baking a cake. It is made up of healthy flour and a very good option as a snack.

While getting ready to assemble everything, I thought of adding chocolate chip and walnut as an attraction to kids and it worked out very well with finger millet or Ragi flour as well. Now we will see how I proceeded with the ingredients.

Ingredients:

Whole wheat Flour – 1 cup

Ragi/ Finger millet flour – 1 cup

Baking soda – ½ tea spoon

Baking powder – ½ tea spoon

Salt – ¼ tea spoon

Walnuts – ½ cup

Choco chip – ½ cup

Butter – 100 grams

Eggs – 2

Sugar – 1 ½ cup

Hot milk – 1 cup

Instant Coffee powder – 1 to 1 ½ table spoon

Hot water – ¼ cup (you can take little less than ¼ cup)

Method:

-Pre heat oven at 180°C, line a baking tray with the butter paper.

-Take one bowl and mix all the dry ingredients like, flour, baking soda, baking powder, salt, walnuts and Choco -chips.

-In another bowl, beat melted butter, eggs, sugar, milk by adding one by one respectively.

-Make dark coffee by mixing powder and water. Mix in the liquid and beat.

-Now wet mix is also ready.

-Pour this wet mixture to dry ingredients and fold the batter by using any spatula.

-Pour the batter in lined baking tray and keep this for baking until done.

-It takes anywhere between 40 to 50 minutes.

-Before removing, check with a knife by inserting, in the baked cake.

-Knife should come out clean.

-Remove the cake, cool before cutting, and serve.

Seasoned Neer Dosa / Thellavu Oggarane:

Neer Dosa batter usually finished off as a fresh batter. We traditionally don’t keep Neer Dosa batter to ferment. We finish off all the batter by preparing dosas and keep. My family likes the seasoned sweet version of this at evenings as after school or office snack. That is the reason why I make it a point to soak more rice and prepare more dosas in the morning and keep them. Now we will see how I make this-

Ingredients;

Left over dosas – 8

Coconut oil – 1 table spoon

Mustard – 1 tea spoon

Urad dal – 1 tea spoon

Dried Red chilli -1

Curry leaves – 1 spring

Salt – ¼ tea spoon

Coconut – ½ cup (grated)

Jaggery – grated (as needed)

Method:

-Break Neer Dosa into pieces by using hand.

-Prepare mixture of grated jaggery and coconut and keep aside.

-Heat one tawa, add oil, splutter mustard, fry urad dal, red chilli and add curry leaves.

-Add pieces of Dosa, sprinkle salt and add coconut jaggery mixture.

-Heat until it all mixes and then switch off the gas and serve as a snack.

Avalakkki/Poha Chiwda:

Chiwda or Chivda is an integral part of Diwali festival. It is nothing but savoury rice flakes or Poha. This is not the usual deep fried one. It is a melt in the mouth kind, is very low in calories and is a light snack. My mom used to make this with Nylon Poha or super thin Poha.

This is how my mom used to make it-

Ingredients:

Nylon Poha /Paper thin poha – 500 Grams

Tamarind powder or Amchur powder – 2 tsp.

Salt – to taste

Sugar powder – to sprinkle.

Seasoning:

Oil – 4 tbl sp

Peanuts – 4 tbl sp

Mustard- 2 tbl sp

Cumin- 1 tbl sp

Hing – 1 tsp

Curry leaves – 7 -8 springs

White sesame seeds – 2 tbl sps

Turmeric powder – 2 tsp

Green chillies – 3 -4 Chopped

Dry Coconut bits –  3 tbl sp

Coriander leaves – 3 tbl sp

Method:

-In the morning keep beaten rice /Poha under the sun by spreading on a thin clean cloth.

-If you want you can cover this Poha by using another thin cloth to avoid dust accumulation while drying.

-Keep this for two to three hours or until it becomes crunchy.

– When it is ready, remove from outside and keeps everything ready for seasoning.

– Chop green chillies, curry leaves, coriander leaves.

– Slice coconut and make bite size pieces.

-Make sugar powder and keep aside.

-Now take one big kadai, put oil. When it is hot add peanuts.

-When it is half done, add mustard. After it splutters go on adding Cumin, hing, curry leaves and green chillies one by one.

-When curry leaves become crisp add coconut bits and fry a little.

-Lastly add chopped coriander leaves and fry nicely until coconut bits becomes brown.

-Now add all the powders- turmeric, salt, tamarind and sugar.

-Switch off the gas, add sun dried Poha and mix thoroughly until it holds all the masalas.

– Don’t put lot of pressure while mixing, if you do so, crunchy Poha will break and will not hold the shape.

-After mixing, cool and store this in an airtight container. This stays good for one month or more.

Enjoy this with evening tea.

NOTE: If you don’t have access to sunlight, you can roast this in kadai after doing seasoning. Keep it for some time in a low fire and make Poha crispy or use microwave for roasting before seasoning.

Thagathe Soppina Vada/Cassia Tora Fritters:

Thagathe soppu is nothing but Cassia Tora or Senna Tora in English. It mainly grows as a weed in open grounds or road side in Rainy season. It is a very useful plant and mostly ignored by all. Leaves of this plant are not only used as a medicine; its seeds are also used widely in Ayurveda.

In our coastal belt, we do prepare lots of delicacies from its young leaves and this vade or fritters is one among them. These fritters are served as a snack or as a starter for lunch/dinner. This monsoon delicacy is also called dangar in Konkani. 

Ingredients:

Dosa rice – ¾ cup

Toor dal – 2 tablespoons

Dried red chillies – 5 – 8 ( Byadagi)

Salt

Hing – generous pinch

Tamarind – ½ tsp

Coconut – ½ cup

Chopped greens – 1 to 2 cups ( as needed)

Chopped onion – 1

Method:

– Wash and Soak rice and dal for 3 hours.

-Roast red chillies, chop onions , Clean the leaves, remove stalks, wash thoroughly ,chop the leaves and keep it ready.

– At first grind coconut, hing, salt, red chillies in to paste.

– To this, add soaked rice and dal mix, grind this into a small rava consistency by adding very little water.

– Remove from the mixer grinder, add chopped leaves , onion and mix thoroughly. 

-Heat oil in a small kadai. When it is hot, take bite size of batter and pat a little in your palm and deep fry.
-Serve this as a side dish with Dal – Rice or Rasam and rice.
 

Note: If you don’t have access to Cassia Tora leaves, instead you can use chopped Moringa or Methi or fenugreek leaves as well.

 

Chikki from ellu bella/ Energy bar from left over sesame mixture:

Makara sankranti festival is over and you may have left over Ellu Bella which you got from your near and dear ones during distribution to each other.Usually there will be no takers for this after two days of festival. Even I had some left over sesame mixture and tried this Indian Chikki or energy bar from these power packed ingredients.This mixture usually has lots of sesame seed, which is a high iron source, peanuts, coconut bits etc.

Ingredient:

Left over ellu bella mix – as much as you have

Sugar – 3 to 4 spoons (What I took)

Butter – 1 table spoon

Cardamom powder – ¼ teaspoon

Method:

  • Separate Sugar blocks as well as jaggery chunks from the mixture.

  • Take one thick bottomed vessel; add all these jaggery and sugar chunks as well as extra sugar with butter.
  • Heat this by constant stirring, until it becomes caramelized liquid.
  • Immediately mix in the rest of the sesame mixture and cardamom powder mix nicely to coat caramel liquid uniformly.

  • Spread this on a clean kitchen counter or butter paper laid baking tray and press this nicely till it is uniformly flat.
  • You can use either pav bhaji masher or roti belan to press this mix.
  • Make a mark when it is hot by using sharp knife.pic 5
  • When it is cool, store this in an airtight container.

 

Til Chikki /Indian Sesame Brittle:

Makara Sankranti and Sesame/Til seed are very much associated with each other. Every year my kids look forward to having their favourite Chikki on this auspicious day. This time I wanted to make a different type by enhancing its nutritional value by adding other ingredients too. Finally came up with this recipe.

Here I have taken one big water tumbler as a measuring cup.

Ingredients:

Peanut: 1 cup

Sesame seed – ½ cup (white and black mix)

Sunflower seed -1/2 cup (de-skinned one)

Roasted gram – ½ cup

Almond – ½ cup (slice or chunks)

Cashew bits – ½ cup

Desiccated coconut – ½ cup

Sugar – 2 ¼ to 2 ½  cups  ( if light sweet, add 2 1/4 cup otherwise, add more) 

Ghee/clarified butter – 2 tablespoons

Cardamom powder – 1/2 tsp 

Method:

-Dry roast peanuts, remove the outer skin and make halves.

-Now dry roast sesame seeds, Sunflower seeds, Roasted gram, almond chunks, and Cashew bits one by one and keep aside. For roasting, you can use a stovetop method or microwave.

-When it’s a little cool, add desiccated coconut, cardamom powder and mix nicely. Keep it aside.

-Take one rolling pin and apply little ghee and keep aside.

-Now we have to make the caramel by adding sugar and ghee in a thick bottomed vessel/tawa. Keep this on a stovetop, heat it until it attains liquid form and becomes light brown in colour. This is caramel. (Please refer to the below picture for stages to attain light brown colour)

-Without wasting any time, mix in the nuts and spread this on a wooden plank or on a clean kitchen platform. Use ghee applied chapati rolling pin (belan) and spread this mixture nicely till it is uniformly flat.

-Leave this for 5 minutes. Take one knife and mark, cut it into the desired shape. After it cools down completely you can store this in an airtight container.

Chikki Preparation by Using Jaggery: (Ratio should be 1 part of dry fruits: ½ part of jaggery)

Follow all the steps precisely like Sugar added chikki. You can omit or add any ingredients according to your wish.

Instead of Sugar, take grated jaggery, loosely fill the cup and measure, by using the cup in which you are taking the ingredients.

-First, take the jaggery, put water, ghee. Heat the solution and strain. If any sediment or tiny particles, it would go away, and the final result would be perfect.

-Then start boiling, until it reaches the frothy, thick. At this stage, pour one drop of the liquid in a small cup of water and check. It should come together, like a crystal and you should be able to break it easily.

-If it is not yet ready, it will come(extend) like a chewy thread. You will not be able to break it.

-If it is ready, pour all the roasted dry fruit, mixed and kept into the solution. Switch off the gas. Give a stir, spread, and follow all the steps like a sugared one, which I have dealt earlier.

-Enjoy all the goodness without a pang of guilt.

NOTE: -I would suggest the usage of Sugar for the first-timers. It is foolproof and easy.

-After a couple of trials with Sugar, you would be knowing about the stages and gradually shift to jaggery.

-Here, I have taken round, organic ball jaggery, made into chunks by using the stone pestle.
