Almond Vanilla cake :

Hey, Anushree here! This is my second guest post on my mom’s blog ( My first one was a red velvet cake, if you haven’t checked that out, click right here).

So, it is my parents as well as my mom’s Blog anniversary today, and since my sister and I are home, and the world has come to a pause (pretty much), I thought it would be a good idea to make something for their special day. My mom doesn’t like chocolate much and loves milder flavours. My dad pretty much loves all desserts, so I decided to make a healthy, and yummy almond and vanilla cake, with a glaze instead of frosting as we aren’t too fond of the cream icing. So, while frosting, instead of new age cream cheese, I have opted for an original Ermine icing, which is also known as boiled milk frosting. Here, instead of All-purpose flour, I have used a mixture of  Almond flour, oats flour, and whole wheat flour.

Ingredients:

For the cake:

Almond flour/ meal – ½ cup

Whole wheat flour – ½ cup

Oats flour – ½ cup

Sugar -¾ cup 

Baking powder -1/2 tsp

Baking soda- ½ tsp

Salt – ¼ tsp

Butter – 2 tablespoons

Curd – ½ cup

Egg – 1

Vanilla essence – 1 tsp

For the Glaze:

Milk – 1 cup

Almond flour – 5 tablespoons

Arrowroot powder – 1 tablespoon

Butter – 50 grams

Sugar – ½ cup

Vanilla – 1 tsp

Slivered Almonds – As needed

Method:

To Bake the cake:

-Preheat oven for 180° C . Line the baking tray and keep it ready.

-Measure every ingredient and keep it ready. Melt butter and keep aside.

-Take one glass bowl, beat egg, then sugar, melted butter, curd, vanilla beat everything until it is well mixed and keep aside.

-Now take one more bowl, put all the dry ingredients, all the three flours, salt and baking soda, baking powder. Sieve a couple of times or dry whisk and keep it ready.

–Pour the previously prepared wet mixture to dry ingredients and fold the batter by using any spatula.

-Pour the batter in the lined baking tray and keep this for baking for 40 -50  minutes or until done.

-Before removing, check with a knife by inserting, in the baked cake. It should come out clean.

-Cool the cake completely before doing the frosting part.

Method for Frosting:

-Take milk, Almond flour, and Arrowroot powder in a saucepan. Boil the mixture until it is cooks and becomes creamy.

-Switch off the flame, add in butter, sugar, and vanilla, mix well. Cool the mixture and keep it in the fridge to cool further making it thicker. ( I have not kept it in the fridge)

-Now, slice the cake, make a 2-equal slice, Apply the frosting on the first layer and cover it with the second slice.

-Now pour the frosting on the top, we like the sauce texture and left it like that.

-Decorate the cake with slivered almonds and serve and enjoy with the family <3

Coconut Flour and Buck wheat Chocolate chip cookies:

In my earlier posts I have discussed regarding homemade coconut flour as well as  eggless coconut flour cookie with chocolate chip.

One thing we must keep in our minds while using coconut flour is, do not underestimate its absorption power by seeing its light and airy texture. It absorbs moisture like a sponge. What I learnt from my previous experience is, it needs almost equal amount of moisture content as flour volume.

Here I have tried with egg as well as without egg by adding  flax gel as an egg replacer, mainly because of its gel like texture. Coconut flour does not have any holding capacity, so thought of using flax gel.

In this experiment I have taken equal amount of coconut flour and buck wheat flour ( I did try with millet flour as well)  it did absorb the liquid, swell and gave me Eleven  cookies 😊 More than everything, this was interesting!! Baking Coconut Flour by adding millet/ buck wheat flour . This was a little experiment, and the results were not bad at all! I got the big thumbs up from my twins.

Let us see the procedure for With Egg Version –

Ingredients:

Coconut flour – ½ cup

Millet/ Buck wheat flour – ½ cup

Choco chip – ¼ to ½ cup

Pink salt – ¼ teaspoon ( you can use normal salt as well)

Cinnamon powder – ½ tsp

Cooking soda  + baking powder – ¼ tsp ( 1/8th  tsp  each)

Eggs – 2

Ghee – 2 tablespoons

Vanilla – ½  teaspoon

Organic Natural brown sugar – ½ cup (you can use normal sugar or jaggery as well)

Method:

-take one bowl, add all the dry ingredients: Both the flours, salt, cinnamon powder, cooking soda, baking powder and Choco chip. Mix everything and keep it aside.

-Beat the egg , add vanilla, sugar, and ghee. Beat everything until you see a bubbly texture.

– Pour wet mix into dry ingredient and fold everything and prepare a dough. It would be sticky and wet.

-Keep this in a refrigerator at least for a half an hour. By this time, coconut flour would absorb the moisture and batter would be perfect to scoop out.

-Pre heat oven at 170 °C. Line the baking tray with the butter paper.

-Scoop out the mix by using ice cream scooper and arrange in a lined baking tray.

-Bake this in a pre-heated oven for 15 to 20 minutes.

-Do not touch while removing, it will be incredibly soft. Remove the tray and cool as it is.

-After cooling, it will harden a bit. After it cools down completely, store it in an airtight container.

– These cookies are slightly crunchier at outer circle, soft and chewy at the centre.

– It becomes a little harder and firmer the next day .

For Without Egg Version:

For Egg less version, please use any egg replacer or 

Flax gel: The basic ratio is 2 ½ tsp of flax seed powder and three tablespoons of  hot water  and then you simply whisk in the mixture until it becomes gelatinous  to replace one egg.

-Here, after mixing the wet and dry mixture, you can directly proceed to baking. No need to keep it in the fridge. Dough is less liquid, compared to the with egg version.

-Cookies turn out much more heavy and crunchier than the with egg version. Does not spread while baking. It holds the shape very nicely.

Red velvet Cake :

Hey, this is Anushree here and this is my first guest post on my mom’s blog! I have been home from college for a few days now and thought I’d make something special as Christmas is coming up and my sister is coming back from college in 2 days! So, I decided to make a Red velvet cake.

Yes! You heard it right. It is not deep red in colour but filled with healthy ingredients. It is No Artificial colour and No All-purpose flour recipe. And to pull this off, I obviously needed some assistance from an expert in healthy cooking, who happens to be my mom, so that worked out great for me!

In olden days, Red velvet cake was made with All-purpose flour and Beets. Here I have used Mixed healthy flour ( Amaranth , Red rice and Almond flour) with beetroot. So, it is not a white cake with red dye.

While frosting, instead of new age cream cheese, I have opted for an original Ermine icing , which is also known as boiled milk frosting. Here, instead of All-purpose flour I have used mixture of  Almond flour and Arrowroot powder with milk to attain a creamy and flowy texture.

Here is my recipe- Fits for 9” spring foam pan.

Ingredient:

For the Cake:

Beetroot – 1 (small,  to get 3 tablespoons of puree)

Amaranth flour – 1cup

Brown rice flour – 1cup

Almond flour – ½ cup

Cocoa powder – 1 tablespoon

Cooking soda – 1 tsp

Salt – ¼ tsp

Eggs – 2

Brown Sugar – 1 ½ cup

Butter – 200 grams

Vanilla – 1 tsp

Buttermilk – 1 ¼ cup

For the Frosting:

Milk – 1 cup

Almond flour – 5 tablespoons

Arrowroot powder – 1 tablespoon

Butter – 50 grams

Sugar – ½ cup

Vanilla – 1 tsp

Desiccated coconut – as needed

Slivered Almonds – As needed

Method:

To Bake the cake:

-Pre heat oven for 180° C . Line the baking tray and keep it ready.

-Cook Beetroot in a pressure pan for 2 to 3 whistles, peel the skin and grate.

-Measure every ingredient and keep it ready. Melt butter and keep aside.

-Take a mixer jar, make a paste of grated beet with ¼ cup of buttermilk ,which we have kept for the batter preparation.

-Take one glass bowl, beat eggs, then sugar, melted butter ,pureed beetroot, vanilla and lastly one cup of buttermilk.

-Beat everything until it is well mixed and keep aside.

-Now take one more bowl, put all the dry ingredients, all the three flours, cocoa powder, salt and cooking soda. Sieve couple of times or dry whisk and keep it ready.

–Pour the previously prepared wet mixture to dry ingredients and fold the batter by using any spatula.

-Pour the batter in lined baking tray and keep this for baking for 40 -50  minutes or until done.

-Before removing, check with a knife by inserting, in the baked cake. It should come out clean.

-Cool the cake completely before doing the frosting part.

Ginger Molasses Cookies:

Molasses cookies are chewy compared to any normal cookies. If it is made with wholesome flour with added ginger flavour, there’s nothing like it. It finally transforms into an absolute delicious wholesome snack for small kids or elders. Here is my Healthy, no all-purpose flour Ginger Molasses Cookies.

It is easy to make, with no rolling or freezing. Make the dough, scoop it out, roll this in crystal sugar and bake. That is, it. Stays good for a week or more.

If you want to make a huge batch, follow as it is. Otherwise, please make it half and proceed. Here I have taken multi millet flour (morning porridge powder) and whole wheat powder. You can play with the flour or straight away use All purpose flour or whole wheat flour according to your choice.

Ingredients:

Flour quantity – 4 ½ cup (porridge powder + whole wheat)

Butter – 300 grams (softened)

Brown sugar – 2 cups

Molasses / Jaggery syrup – ½ cup

Eggs – 2

Cooking soda – 4 tsps.

Ginger powder – 1 table spoon

Cinnamon powder – 1 tsp

Chocolate chunks/ chips – as needed (optional)

Salt – 1 tsp

Sugar – to coat

Method:

-Whisk all the dry ingredients (flour, cooking soda, ginger powder, Cinnamon powder, salt, chocolate chips.

-Take a big bowl or a processor, cream butter and sugar. Add eggs one by one and beat.

– Add molasses and beat one more time. Pour mixture of dry ingredients and prepare a dough.

-Place this dough (little sticky dough) in a fridge by closing a cling wrap, for one or two hours.

-Pre heat oven at 170 °C.

-Take out the dough, scoop out, roll the top part in crystal sugar and place it on the butter paper lined cookie tray.

-Bake for 12 to 15 minutes. Remove, cool and store it in an air tight bottle.

Note:

-If you don’t have Molasses, please melt half cup of jaggery powder in little water and boil until it is  thick and use it.

You can mix sugar crystals with half tsp of ginger and cinnamon powder to get more flavour.

I have made plain cookies as well as with chocolate chunk and both tastes equally good and stays good for many days.

DATE CAKE:

I must say, this cake is my Signature dish and very close to my heart. When I was trying my hand in baking, I experienced a lot of failures, but this recipe has uplifted my faith in trying and achieving my goal.

Whenever I made this, everyone liked it for its soft, moist texture. As a little treat to help you relax and settle into Christmas mood, I will share my very easy Date cake recipe with very minimal ingredients. If anyone wants to try their hand at baking, this is just the recipe for you. Just go ahead and try this, you will never regret it.

Now we will see how to make this,

Ingredients:

Dates – 1 cup

Butter /oil – 1 cup

Sugar – 1 cup

All purpose flour – 2 cups (you can mix whole wheat and all purpose too)

Eggs –  2 (beaten)

Water – 1 cup

Cooking soda – 1 tsp or little less.

Method:

– De-seed the dates and chop it either by using food processor or knife, keep aside.

-Grease the baking tray (you can use bread tin as well). Line this with butter paper, keep it ready.

– Take water in a small bowl and boil. When it starts boiling switch off the gas, add chopped dates, butter, sugar, and cooking soda to boiled water and keep aside at least for 20 min.

– After it cools, add beaten eggs and mix nicely.                          

-Now fold in All-purpose flour, mix gently and pour this batter to greased and lined baking vessel.                                              

-Bake this in a pre- heated oven for 35 -40 min or until done at 180 C.

-If you want to check its doneness, use tooth pick or knife. Insert this, if it comes out clean, remove the tin, keep it outside.

-After some time, remove butter paper and cool further.                  

-When it reaches room temperature, you can slice it or cut according to your wish and enjoy with cup of coffee or tea.

Note: For the Eggless Version, use 1/2 cup of flax gel and you can refer my earlier post for the preparation.

 

 

 

Peek a Boo “Baked Gulab Jamun cheese cake”:

Long ago, I mean in and around 2015 I tried the No bake cheese cake with hidden Jamun inside on the event of my hubby’s birthday. I was wondering what to make, and I thought, why not a mix of what he likes? He loves Badam milk and Gulab jamun; so, I thought of combining these two flavours and made a jamun cheese cake and he did wonder about the flavour. The upper layer of almond milk flavour went well with the Gulab jamun and the cheese cake was a very big hit! At that time, my recipes used to publish on Readoo and you can see it over here.

Today, we are celebrating our 20th year of marriage as well as 2nd year of my blogging. So, I thought of improvising my idea and went ahead with the same flavour but baked version as well as non-baked top layer.

To mark the occasion, I made my signature cheese cake flavour with a little additional twist and here is the recipe-

Ingredients:

For the first layer (Crust):

Choice of any crackers biscuits – 1 ½ cup to 2 cups (powdered)

Sugar – 5 to 6 table spoons

Melted butter – 1/3 cup

Gulab Jamuns – Dried (sugar syrup removed)

Method:

-Pre- heat oven at 165°C

-Combine all the ingredients from biscuits powder, sugar and melted butter. It becomes like a wet crumb.

-Take a 9 to 10” spring-form baking dish, press this crumb at the base by using any one of your measuring cups.

-Crumb should be slightly above the base at the edges.

-Before heading towards the second layer, arrange all the Gulab jamuns according to your wish.

For the second layer (Filling):

Cream cheese – 3 tubs (238 grams or 250 grams)

Sugar – 1 ½ cup

Eggs – 4 (separated)

Lemon juice – 1 table spoon

Vanilla extract – 1 tea spoon

Method:

-Mix together Cream cheese, sugar, 4 egg yolks, lemon juice and vanilla.

-In another bowl, beat 4 egg whites until frothy and little stiff as well as creamy.

-Fold egg white with cream cheese and pour the mixture over the first layer/Gulab jamun layer.

-Bake for 45 minutes to 1 hour or until done, in a preheated oven at 165°C.

-When it is done, you will find a raised dome like a structure and 2 to 3 slits at the centre. After switching off the oven, leave the cake inside the oven at least for an hour with the oven door closed.

-After an hour, remove it and chill in the refrigerator by enclosing it in cling wrap, if you are not adding the 3rd layer immediately or proceed for a third layer.

For the 3rd Layer (Glaze):

Milk – 1 ¼ cup

-Veg gelatin -1 tsp

Badam milk – 4 tsps

Custard powder – 1 tsp (vanilla flavour)

Saffron strands – generous amount

Method:

-Dissolve gelatin in ¼ cup of milk.

-Dissolve custard powder, Badam milk powder and add saffron to one cup of milk and start heating.

-When it is hot, add in gelatin added milk and boil for 2 minutes.

-Pour the mixture over the ready cooled cake. When it is set and becomes cool, cover the cling wrap and keep it a refrigerator to cool.

-It needs at least an overnight or 8 hours of cooling. I kept it for 20 hours. It tasted as I was expecting and loved the outcome and it surely made my special day a memorable one.

 

Chocolate chip Cookies:

Who doesn’t like Choco chip cookie? Let alone like, it is very difficult to resist. If it is guilt free, it is an added boon to relish these beauties. I usually don’t encourage my kids to have non-healthy stuff. It is the main reason I developed this recipe with lot of care.

It is a crunchy from the outside and soft from the inside kind of cookie. It has a whole wheat as well as protein rich Roasted gram powder, which is very nutritious and known as Sattu in India. Sattu is a powder form of roasted gram or Bengal gram or hurigadale in kannada. Added to this, I have added clarified butter/ ghee and ghee residue as well. To give more chocolatey appearance, added Choco chunks as well as chopped cooking chocolate.

How I proceeded is –

Ingredients:

Whole wheat flour – 1 cup

Roasted gram flour/ Sattu – ½ cup

Baking soda –  1 tea spoon

Sea salt – ½ tea spoon

Choco chip – ½ cup

Chopped chocolates – ½ cup

Ghee – ½ cup

Ghee residue – 2 table spoon (optional)

White sugar – ½ cup

Brown sugar – ½ cup

Eggs – 2

Vanilla extract – 1 tea spoon

Instant coffee powder – 1tea spoon

Method:

-Pre heat Oven at 180 °C, Line the baking tray with the butter paper.

-Take one bowl, dry whisk all the dry ingredients starting from Whole wheat flour, Sattu flour, Baking soda, sea salt, and Choco chips and chunks.

-In a Food processor or in another bowl, beat sugar, ghee and ghee residue first.

– Add in egg, vanilla, coffee and beat until it is frothy.

-Now pour this liquid over dry ingredient and mix by using spatula or clean hand.

– Scoop out the dough and place over the lined cookie sheet.

-Bake this in a pre-heated oven for 15 minutes or until done.

-When it is done, take out, cool a little and then store this in an air tight container.

-This yielded 18 big size cookies for me.

NOTE:

-Alternatively you can use only All purpose flour or whole wheat flour as well.

-Ghee residue is a moist, brown coloured by-product formed after preparing ghee from white butter.

 

 

Walnut – Chocolate chip Coffee Cake:

Coffee flavoured cake happened by chance. I had some unused Nescafe instant coffee and wanted to finish it ASAP. So, I thought of baking a cake. It is made up of healthy flour and a very good option as a snack.

While getting ready to assemble everything, I thought of adding chocolate chip and walnut as an attraction to kids and it worked out very well with finger millet or Ragi flour as well. Now we will see how I proceeded with the ingredients.

Ingredients:

Whole wheat Flour – 1 cup

Ragi/ Finger millet flour – 1 cup

Baking soda – ½ tea spoon

Baking powder – ½ tea spoon

Salt – ¼ tea spoon

Walnuts – ½ cup

Choco chip – ½ cup

Butter – 100 grams

Eggs – 2

Sugar – 1 ½ cup

Hot milk – 1 cup

Instant Coffee powder – 1 to 1 ½ table spoon

Hot water – ¼ cup (you can take little less than ¼ cup)

Method:

-Pre heat oven at 180°C, line a baking tray with the butter paper.

-Take one bowl and mix all the dry ingredients like, flour, baking soda, baking powder, salt, walnuts and Choco -chips.

-In another bowl, beat melted butter, eggs, sugar, milk by adding one by one respectively.

-Make dark coffee by mixing powder and water. Mix in the liquid and beat.

-Now wet mix is also ready.

-Pour this wet mixture to dry ingredients and fold the batter by using any spatula.

-Pour the batter in lined baking tray and keep this for baking until done.

-It takes anywhere between 40 to 50 minutes.

-Before removing, check with a knife by inserting, in the baked cake.

-Knife should come out clean.

-Remove the cake, cool before cutting, and serve.

Orange – Nutella Swirl cupcakes:

These millet cupcakes are healthy and delicious at the same time,  a very good snack for all the kids who are studying hard for exams.

Ingredients:

Mixed millet flour- ½ cup

Whole wheat flour- ¼ cup

All-purpose flour – ¾ cup

Ghee – ¼ cup

Egg – 1

Sugar – ¾ cup

Salt – ¼ tsp

Baking powder – ¾ tsp

Baking soda – ¾ tsp

Curd – ¾ cup

Orange zest – 1 tsp

Nutella – as required

Method:

  • Pre-heat oven in 170 C. Line cupcake baking tray with paper liners.

  • Mix all the dry ingredients like millet flour, whole wheat flour and all-purpose flour, baking powder and soda, sieve 2 to 3 times or mix with dry whisk.
  • Now take one more bowl or food processer, put egg, curd, sugar, ghee, salt and beat nicely.
  • Grate orange zest from outer surface of the orange (Don’t add any white part) and add this to liquid and beat one more time.
  • Now pour this wet mixture into dry ingredient mixture and fold in and mix everything lightly.
  • Don’t over mix.
  • Pour this mixture into cupcake tray by using the spoon.

  • Drop Nutella on the top of each batter filled cupcake mould, swirl a little.
  • Bake this in a pre-heated oven for 15 minutes or until done.

  • Enjoy with evening tea. It is a good option as a snack as well.

Lemon pudding cake with Fresh Strawberry Sauce:

Soft, melt in a mouth citrusy warm pudding is paired with fresh strawberry sauce. It is a real treat in winter evenings. The basic recipe is from here and I adapted it according to our taste and availability of the ingredients.

Ingredient:

All-purpose flour or Almond flour – ¼ cup

Salt – one pinch

Lemon zest – from one lemon

Eggs -2 (separated)

Butter- 1 tablespoon

Sugar- 2/3 cup

Buttermilk – 2/3 cup

Lemon juice – 2 tablespoons

For Sauce:

Strawberries- 20

Sugar – 2 tablespoon

Method:

  • Combine dry ingredients in one bowl. i.e. All-purpose flour, salt, lemon zest and mix this nicely by using a dry wire whisk.
  • Preheat oven at 160° C . Keep cookie tray inside by putting water. So that the water bath will be ready to bake while preheating.
  • Take 4 pudding moulds and apply some butter or oil and keep aside.
  • In another bowl, beat egg yolks, buttermilk, lemon juice, sugar. Beat until well mixed.
  • Add dry ingredient content to this and keep aside.
  • In another bowl, beat egg whites until you get stiff peaks. It takes almost 2 to 3 minutes of beating.
  • Combine this with a pudding mixture by folding gently by using a wooden or plastic spatula.
  • Divide evenly by filling this into 4 pudding moulds.

  • Bake these filled cups in a hot water bath for 40 minutes or until the top becomes light brown.
  • After placing the cups, check for the water level in the cookie tray (water bath). If it is less, please fill it with little hot water and close the oven door.
  • When it is done, remove from the water bath and cool those cups.

  • Now you can make strawberry sauce or Compote :
  • Chop all the strawberries, Mix in sugar and keep aside for 5 minutes. Churn half of the content in a mixer jar and keep another half as it is. So that you will have some chunks in your sauce and it looks good as well OR to make the compote, cook all these until syrup become bubbly and cool before serving it. 
  • For serving, invert the pudding on a serving plate and pour some strawberry sauce and enjoy.

Note: To invert the pudding, you can use a small knife at the edge and it will release itself from the sides.
