Millet –banana stem dosa:

Every part of the banana plant has its benefits to our health. Banana stem is one such thing, which is high in fibre and filled with nutritious water. It is perfect for Human gut as well as the kidney.

The juice of the banana stem helps in flushing out toxins as well as to prevent kidney stone formation as well. Overall it acts as a healing food for the human body. In coastal Karnataka, we do use plantain stem or flower in various recipes. I have already shared our traditional Dosa recipe, and it is here, and previously I have shared Raw salad, curd salad and Rasam recipe.

When Plantain stem and millet combine, it is a perfect balance and can be a diet food or whoever is cutting down their rice intake due to their health issues. This dosa turns crispy and goes very well with any side dish of your choice. Tried and did this for my millet calendar project, published in 2017 and filing the recipe under Diabetic friendly recipe in my blog.

Ingredients:

Foxtail Millet – 2 cups

Rice – ¾ cup

Urad dal – ¼ cup

Banana stem – from 6” piece

Methi – ¼ tsp

Poha – ½ cup

Buttermilk – 1 cup

Method:

-Wash millet, rice and urad dal together. Add poha.

-Soak in buttermilk for 2 to 3 hours.

– To chop banana stem, remove the outer cover and make slices of inner pith.

-While slicing, you will find little thread-like fibre, discard that by drawing by hand.

-After slicing into round pieces of dice and use this for grinding.

-Grind soaked items with banana stem and salt.

– Ferment overnight and next day morning you can prepare Dosas.

Note: You can use any millet instead of foxtail. Taste doesn’t change.

Savoury muffins:

Perfect for small eats, lunch boxes, travels for all age groups and it is so good to grab and have on the go, or have while working or have while study break or have while feeling indulgent.

In my opinion, it is one healthy guiltfree, cheesy and feels good snack. It is one more recipe from my millet calendar project, published in 2018.

Instant Ragi Rava Dosa:

Instant preparations are always handy when you are in a hurry or in a “no mood to cook” situation. I usually prefer Ragi Rava dosa to make, because it has the goodness of Ragi/ finger millet and everyone likes it in this form. Dosa turns out very crispy and tasty. One can have it with coconut chutney or any leftover sambar or with pickle or as it is. It has a nice natural flavour as well.

If you plan to make Rava dosa, you can mix the batter and keep it at night itself. Otherwise, no worries, mix and proceed to make dosas. Even some ingredients are optional; if you add coconut, greens, it would surely enhance the taste.

Ingredients:

Ragi flour – ½ cup

Fine Rava – ½ cup

Rice flour – ¼ cup

Salt

Hing – a pinch

Black pepper – ½ tsp

Cumin – ¼ tsp

Grated coconut – ¼ cup (optional)

Coriander leaves – 2 tablespoons (optional)

Methi leaves – 2 tablespoons (optional)

Method:

-Crush black pepper and cumin in a mortar and pestle.

-For dosa mix: Mix in Rava, rice flour and Ragi flour, salt, hing, crushed cumin -pepper and a little water and keep aside at night (optional) otherwise mix in the morning and proceed.

– If you have mixed and kept it at night, add in grated coconut, chopped coriander leaves or methi leaves in the morning.

-Make batter into pourable consistency like Rava dosa or neer dosa batter and check for the salt.

-Now keep Iron griddle for heat.

-When it is ready, grease with oil, pour one serving spoon of batter-like how we make Rawa Dosa, you can see it in the picture below.

-Now close the lid by keeping the gas on full flame.

-After two minutes, remove the lid and keep the gas in simmer. The edges of the Dosa rise a little.

-Now flip this Dosa on the plate, leave for 2 minutes, then fold like this.

– Now keep repeating this with the remaining batter and stack one over the other or take one big plate and stalk one opposite another alternately.

-Serve these Dosa with coconut chutney or with any other gravy of your choice or have it as it is.

Coconut Flour and Buck wheat Chocolate chip cookies:

In my earlier posts I have discussed regarding homemade coconut flour as well as  eggless coconut flour cookie with chocolate chip.

One thing we must keep in our minds while using coconut flour is, do not underestimate its absorption power by seeing its light and airy texture. It absorbs moisture like a sponge. What I learnt from my previous experience is, it needs almost equal amount of moisture content as flour volume.

Here I have tried with egg as well as without egg by adding  flax gel as an egg replacer, mainly because of its gel like texture. Coconut flour does not have any holding capacity, so thought of using flax gel.

In this experiment I have taken equal amount of coconut flour and buck wheat flour ( I did try with millet flour as well)  it did absorb the liquid, swell and gave me Eleven  cookies 😊 More than everything, this was interesting!! Baking Coconut Flour by adding millet/ buck wheat flour . This was a little experiment, and the results were not bad at all! I got the big thumbs up from my twins.

Let us see the procedure for With Egg Version –

Ingredients:

Coconut flour – ½ cup

Millet/ Buck wheat flour – ½ cup

Choco chip – ¼ to ½ cup

Pink salt – ¼ teaspoon ( you can use normal salt as well)

Cinnamon powder – ½ tsp

Cooking soda  + baking powder – ¼ tsp ( 1/8th  tsp  each)

Eggs – 2

Ghee – 2 tablespoons

Vanilla – ½  teaspoon

Organic Natural brown sugar – ½ cup (you can use normal sugar or jaggery as well)

Method:

-take one bowl, add all the dry ingredients: Both the flours, salt, cinnamon powder, cooking soda, baking powder and Choco chip. Mix everything and keep it aside.

-Beat the egg , add vanilla, sugar, and ghee. Beat everything until you see a bubbly texture.

– Pour wet mix into dry ingredient and fold everything and prepare a dough. It would be sticky and wet.

-Keep this in a refrigerator at least for a half an hour. By this time, coconut flour would absorb the moisture and batter would be perfect to scoop out.

-Pre heat oven at 170 °C. Line the baking tray with the butter paper.

-Scoop out the mix by using ice cream scooper and arrange in a lined baking tray.

-Bake this in a pre-heated oven for 15 to 20 minutes.

-Do not touch while removing, it will be incredibly soft. Remove the tray and cool as it is.

-After cooling, it will harden a bit. After it cools down completely, store it in an airtight container.

– These cookies are slightly crunchier at outer circle, soft and chewy at the centre.

– It becomes a little harder and firmer the next day .

For Without Egg Version:

For Egg less version, please use any egg replacer or

Flax gel: The basic ratio is 2 ½ tsp of flax seed powder and three tablespoons of  hot water  and then you simply whisk in the mixture until it becomes gelatinous  to replace one egg.

-Here, after mixing the wet and dry mixture, you can directly proceed to baking. No need to keep it in the fridge. Dough is less liquid, compared to the with egg version.

-Cookies turn out much more heavy and crunchier than the with egg version. Does not spread while baking. It holds the shape very nicely.

Peanut Cookies with Millet :

When I was trying out some recipes for 2019 Millet calendar, I dished out a couple of recipes, which had turned out super tasty, and at the same time, healthy too.

Here, I have used Samai rice which is known as Little millet in English. I had some little millet flour and made fresh Peanut powder at home and proceeded. It had turned out super delicious as well as creamy/buttery, and at the same time crunchy on the outside.

Ingredients:

Samai flour/ any millet flour – 1 cup

Whole wheat flour – ¼ cup

Peanuts – 1 ½ cup (roasted)

Powdered Sugar or Jaggery – ½ cup

Salt – ½ tsp

Butter – 100 grams

Method:

-Grind peanut in a mixer jar as fine as possible.

-Take one bowl, cream butter and sugar, salt. Add flours, powdered peanut and make a dough.

– Make a uniform sized ball, arrange in a lined baking tray.

– Bake this for 12 to 14 minutes in a pre-heated oven at 170 C.

-When it is done, remove carefully and cool. Store this in an airtight container.

Ginger Molasses Cookies:

Molasses cookies are chewy compared to any normal cookies. If it is made with wholesome flour with added ginger flavour, there’s nothing like it. It finally transforms into an absolute delicious wholesome snack for small kids or elders. Here is my Healthy, no all-purpose flour Ginger Molasses Cookies.

It is easy to make, with no rolling or freezing. Make the dough, scoop it out, roll this in crystal sugar and bake. That is, it. Stays good for a week or more.

If you want to make a huge batch, follow as it is. Otherwise, please make it half and proceed. Here I have taken multi millet flour (morning porridge powder) and whole wheat powder. You can play with the flour or straight away use All purpose flour or whole wheat flour according to your choice.

Ingredients:

Flour quantity – 4 ½ cup (porridge powder + whole wheat)

Butter – 300 grams (softened)

Brown sugar – 2 cups

Molasses / Jaggery syrup – ½ cup

Eggs – 2

Cooking soda – 4 tsps.

Ginger powder – 1 table spoon

Cinnamon powder – 1 tsp

Chocolate chunks/ chips – as needed (optional)

Salt – 1 tsp

Sugar – to coat

Method:

-Whisk all the dry ingredients (flour, cooking soda, ginger powder, Cinnamon powder, salt, chocolate chips.

-Take a big bowl or a processor, cream butter and sugar. Add eggs one by one and beat.

– Add molasses and beat one more time. Pour mixture of dry ingredients and prepare a dough.

-Place this dough (little sticky dough) in a fridge by closing a cling wrap, for one or two hours.

-Pre heat oven at 170 °C.

-Take out the dough, scoop out, roll the top part in crystal sugar and place it on the butter paper lined cookie tray.

-Bake for 12 to 15 minutes. Remove, cool and store it in an air tight bottle.

Note:

-If you don’t have Molasses, please melt half cup of jaggery powder in little water and boil until it is  thick and use it.

You can mix sugar crystals with half tsp of ginger and cinnamon powder to get more flavour.

I have made plain cookies as well as with chocolate chunk and both tastes equally good and stays good for many days.

Healthy “Brown” Neer Dosa:

Usually Neer dosa is made from using only white Dosa rice and it contains only carbohydrate and recipe is already shared and it is here

Couple of years back, when I was thinking of including millets in our regular neerdosa to make a healthier version, dosa used to turn out hard and crispy and I was not at all satisfied with the result. After couple of trial and errors, addition and deletion of ingredients, I got this soft and smooth textured neer dosa like the regular white one and henceforth it is one of our regular breakfast items and we named this as “Brown Neer Dosa”.

How I included these many items? As I mentioned above, I wanted to make soft neerdosa without any compromise on taste. Usually when we add millet in Dosa batter, Dosa becomes little hard and brittle. So, I thought of adding Whole Ragi to give softness with Fox tail millet.

Here I have added Ragi, Organic red unpolished rice with normal white rice to enhance the value, and fox tail millet. Instead of fox tail millet, one can use any other millet as well.

It is an excellent breakfast option for Toddler’s, weight watchers, diabetic diet or low carb diet as well as tiffin box options. It is very soft, easy to chew, digestible and at the same time filled with nutrients and fibre apart from carbohydrates. It doesn’t need any fermentation or planning. Soak in the night, grind and make it in the morning in a jiffy.

Recipe goes like this-

Ingredients:

White Dosa rice – 1 cup

Whole Ragi / finger millet – ½ cup

Red organic unpolished rice – ½ cup

Fox tail millet -1 cup

Salt

Method:

-Measure everything and put it in one bowl, wash twice and soak this in water for 2 to 3 hours or during the previous night like me.

-Next morning, grind this soaked rice into fine paste with water (I use soaked water while grinding, it gives nice aroma for the Dosa) and salt as per requirement.

-Make batter into pourable consistency like this (refer a picture) and check for the salt.

-Now keep Iron griddle for heat.

-When it is ready, apply oil like this.

-Pour one serving spoon of batter like how we make Rawa Dosa, you can see it in the picture below.

-Now close the lid by keeping the gas on full flame.

-After two minutes, remove the lid and keep the gas in simmer the edges of the Dosa rise a little, like this.

-Now flip this Dosa on the plate, leave for 2 minutes, then fold like this.

– Now keep repeating this with the remaining batter and stack one over the other or take one big plate and stalk one opposite another alternately.

-Serve these Dosa with coconut and grated jaggery mixture or coconut chutney.

Coffee flavoured cake happened by chance. I had some unused Nescafe instant coffee and wanted to finish it ASAP. So, I thought of baking a cake. It is made up of healthy flour and a very good option as a snack.

While getting ready to assemble everything, I thought of adding chocolate chip and walnut as an attraction to kids and it worked out very well with finger millet or Ragi flour as well. Now we will see how I proceeded with the ingredients.

Millet health mix is a wholesome breakfast solution for people who leave their home very early in the morning and yet they can get goodness of wholefood by preparing quick porridge. Once the powder is ready, it is super easy and quick to prepare and consume. One can even prepare this drink and carry it in their bag and have it at their convenience as well.

Health benefits of millets and sprouts are numerous. They are filled with nutrients, vitamins and minerals. It really boosts immune system and overall health of human body.

I prepare this porridge specially for my husband, who started following Naturopathic diet after staying and enjoying this simple diet in a Naturopathic centre. Gradually my niece who leaves home by 6:45 AM from home, started carrying this drink as her mid-morning “meal”. It is very tasty, and at the same time, healthy, filling and nutritious too.

How to make the porridge:

I make it in two ways. One is plain and another one is with oats.

For the plain one:

Ribbet collage 3

Take 4 spoons of porridge powder, add 450 ml of water, or as much as you want, according to the required consistency, and boil until it is cooked properly.

At that time, mixture will become glossy.

My husband likes this porridge with a little rock salt and a tinge of sweet (usually I add sugar free Natura)

You can either add plain sugar or Jaggery or brown unrefined sugar as well.

With Oats:

DSC03932_Fotor

Take 2 spoons of porridge powder, 2 spoons of Oats and proceed with the above procedure.

Energy cake:

This energy filled cake has millets, oats, coconut flour. Usually after extracting coconut milk from the fresh coconut, the residue that remains will go into the trash. Coconut residue is very high in fibre. It is much healthier than wheat bran or oats bran. I usually collect this residue, after extracting the milk for any south Indian kheer, and use it in my baking as it is, by storing it under refrigeration for a couple of days.

This energy bar is a little softer than a normal crunchy bar. So, I named it as Energy cake. Shelf life is any where between 2 to 3 days at room temperature, Up to 10 days under refrigeration. If it was under refrigeration, please re-heat to get soft texture.

DSC05271_Fotor

Ingredients:

Oats – 1 cup

Mix millet flour – 1 cup
