Pineapple Menaskai/ Gojju:

Menaskai/Menaskayi is one of our coastal specialities, which is a hot, sweet and sour, sesame flavoured coconut-based curry. Normally made with bitter or tangy things like Bitter gourd, raw mango, wild mango or pineapple. We even prepare by mixing Bitter gourd and raw mango as well. It is a common dish in any of our elaborate menus for festivities, usually served on a plantain leaf, like poojas or weddings. This same curry is prepared in a little different way in other parts of Karnataka and known as “Gojju”.

Here, the main trick is-balancing of all the flavours.

If you are preparing with sour vegetable or fruit, there is no need to add additional tamarind. For example, if you are preparing raw mango or mixture of bitter gourd and raw mango Menaskai, there is no need to add tamarind. If you are using pineapple, tamarind should be added.

Here I have used pineapple and the procedure goes like this-

Ingredients:

Pineapple – 1/2 (chopped into bits)

Raw mango – 1/4 (chopped into bits)

Tamarind – gooseberry size (if the mango is not available)

Jaggery – as needed

Salt

Green chillies – 2 (slit)

For masala:

Fresh Coconut gratings – 1 to 1 ½ cups

Methi seeds – 1/4 tsp

Urad dal – 2 teaspoons

Sesame seeds – 2 teaspoons (U can use black or white)

Dried red chillies – 8 – 10 (we use Byadagi variety)

Coconut oil – 2 to 3 teaspoons (1 for roasting + 1 for seasoning + 1 tsp to garnish)

Mustard – 1 tsp

Dried red chilli -1

Curry leaves – 2 springs

Method:

-Clean pineapple by removing the outer skin, chop into bite-size pieces.

-Cook pineapple pieces and mango pieces or tamarind with little water, turmeric, salt, jaggery, green chillies and curry leaves.

-Dry roast sesame seeds. Now fry all the masalas for grinding. First heat 1 tsp of oil, put methi(fenugreek) seeds. When it is light brown, add all the other ingredients like urad dal,  red chillies and fry until urad dal is light brown. Now it is the time to put coconut and fry further for 2 minutes or until you smell the nice aroma.

-Cool the mixture, grind into a paste by adding sesame seeds and sufficient water as well.

-Add this paste to the cooked pineapple, check for salt and jaggery. Adjust the consistency by adding water and boil nicely in a simmer for 5 to 10 minutes.

-After boiling, add 1 tsp of raw coconut oil as well as the seasoning with coconut oil, mustard, red chilli and curry leaves. Close the lid and leave it to soak all the masalas for half an hour.

-Serve with hot rice.

Note:

-After boiling, the gravy should be a little thicker than normal sambar.

-Taste should be sweet, sour, hot. So adjust the addition of jaggery accordingly.

– We usually relish this dish the next day of preparation, usually with Neer Dosa or chapati/Roti. 😊

 

 

Banana Berati / Plantain Preserve:

Whenever you have large stock of over ripe bananas, this is one such procedure one can follow and finish off all the stock and preserve this for future use. This preserve stays good almost a year or more in the freezer. It is a very handy when you want to make banana payasam/kheer or HalwaHere I have used yellow small variety of banana from Mangalore and we call this as Kadali.

Ingredients:

Over ripe banana – 22

Sugar – 1 bowl 

Method:

 Put all the peeled bananas to mixer grinder and make a smooth paste.

  Measure this by using any bowl of your choice. If this paste is 3 cups in quantity take one cup of sugar in that same measurement cup.

  So, your ratio of banana paste and sugar will be 3:1.

Take one thick bottomed kadai, put this paste and keep gas flame in a very low flame and cook for a while.

       When it changes its colour to milky white, then to a pale colour and when you smell the banana flavour in the air, add sugar and mix this in a regular interval.

   After some time, it will turn into a pinkish or reddish colour and it will start to leave the sides of the kadai. Now it is the time to remove it from the fire.

   Keep as it is and when it reaches room temperature; store it in an airtight container or a zip lock.

   You can do this in a microwave as well. Only thing, you should remove the glass bowl at regular intervals and give a stir and proceed as given above.

 

 

 

 

 

 

 

 

 

Kashmiri Pulav:

The Kashmiri Pulav what we see in restaurants have so many fresh fruits and dry fruits and are sweetish in taste as well. But in 2011, when we went to Kashmir, the care taker of our boat house made this wonderful Pulav which he served with tadka dal. That Pulav neither had fresh fruits nor so many dry fruits and it was not that sweet. It had raw yellow fresh dates, coconut chunks, cashew and raisins. My family liked this very much and wanted to note down the recipe to try it out. When I asked for the same.

here we go for detailed account – 

Ingredients:

Basmati rice – 3 cups

Ghee – 150 Gms

Onion – 2 (sliced)

Ginger garlic paste – 1 tbl sp

Shahi jeera- 1 tsp

Bay leaf – 1

Salt

Saffron – 7 -8 strings

Hot milk – ¼ cup

Yellow dates, Raisins, cashew and dry coconut bits – as you wish.

 Method:

    At first wash rice, soak for 10 min and drain the water and keep aside.

   Soak saffron in hot milk and keep aside. Slice dates, coconut etc.

   Now take one thick bottomed pan, put little ghee, fry cashew, raisin, coconut slices and dates one by one and keep aside.

   Now fry half of the onion in to dark brown and keep aside.

   Pour remaining ghee, put Shahi jeera, bay leaf then remaining sliced onion and fry for a while.

– When it becomes brown add ginger garlic paste and fry until raw smell vanishes.

   Add drained rice, fry for a while.

   Now add 6 cups of water, salt and cook this rice by closing the lid and keeping it in a simmer.

  When rice is almost done, add soaked saffron with milk, fried onion, dates, raisins and cashew.

   Mix everything and keep it in a fire for little more time until all the water evaporates or until rice is done.

Jack Fruit Dosa:

Jackfruit Dosa is known as “Halasina hannina dose”. It is a traditional recipe of Mangalore. Here we use Soaked Raw Dosa rice and ripe jackfruit to make the batter. we can call this as a Jack pancake and serve with honey or with ginger chutney.

Ingredients:

Dosa rice – 2 cups

Cleaned jack fruit – 1 big bowl

Salt

Method:

-Wash and soak Dosa rice in sufficient water for 3 to 4 hours.

– Chop the jack fruit, remove bulbs and separate outer cover and inner seed.

– Collect only the outer yellow shell and put it in a mixer grinder, give couple of whipping sessions and remove.

-So that while grinding it will be easy to handle.

– Now take soaked rice, ground or crushed fruit, put little water and grind this in to a smooth paste by adding sufficient salt. Batter should be a little thicker than normal Dosa.

-If you want to use this batter for the next morning, please refrigerate the same and use for the next day.

– make Dosa’s by using hot iron griddle. No need to ferment this batter. Use ghee while roasting this Dosa. It should be a little thicker than normal Dosa. (thinner than set Dosa). When it is cooked, flip it and cook on the other side.

-serve this with honey or with ginger chutney.

Note:

For ginger chutney: Fry red chillies with little oil and grind it with coconut, salt, little tamarind and piece of ginger.

 

Homemade Gelato:

Gelato is a super-rich, creamy, intensely flavoured natural ice cream. ”Gelato “is the Italian word for an ice-cream, is defined in English as a “Soft ice cream”.

It contains milk cream, sugar and puree of fresh fruit or nut.

Over ripe fruits or Unused fruits are a very good option to prepare this intense fruit flavoured gelato. Here I have used Indian black plum or Jamoon/Jamun fruit and locally we call this as “Nerale hannu” in Kannada.

Ingredients:

Jamoon/Jamun fruit – 250 gms

Condense milk /Milk maid – 400 gms

Fresh cream – 200 ml. (Used Amul brand)

Method:

          Wash Jamoon fruit remove seeds and keep aside.

          Take one mixer jar, churn this fruit only for small interval .Here you should use “Pulse” option in mixer grinder, so that fruit will be like small chunks and will not become puree.

          After this, mix in cream, condensed milk. Whip until you get nice homogenous mixture.

          Store this in an ice cream container and freeze for 5 to 6 hours and enjoy your melt in a mouth flavourful treat.

 

Mango Jam:

Who doesn’t love Mango? Unfortunately, all good things only last a while, but no worries, one can preserve mango by making some homemade jams to savour even after its season ends.!

I started making this Jam almost 3 years back and want to share my recipe before it vanishes from the market for this year. So, yesterday I made this and I’m sharing it with you all-

Thanks to my dear friend Poornima, who provides me with a whole lot of home grown organic Mango’s from their garden.

Now I will proceed towards the procedure-

Ingredients:

Mango’s – 500 Grams

Sugar- 500 grams

Saffron – 8 to 10 strands

Red chilli flakes – 1 teaspoon

Method:

 Wash, Peel the mangoes and chop.

  Make puree by putting it in a mixer/ juice jar without adding any water.

  Sieve this pulp to remove fibres (Here I have taken little fibrous home-grown variety)

  Collect the smooth pulp and heat it in a low fire, until it starts boiling.

 Add sugar, saffron and red chilli flakes and cook until it is done.

  To check the doneness, take some water in a small bowl, drop the cooked mixture in it, immediately it should form a thick mass. If it dissolves, then you should proceed cooking.

 When it is done, remove from the fire and cool completely.

 Store this in a clean, dry bottle and refrigerate.

NOTE:

-If you use very sweet mango, adjust the quantity of sugar.

-If you use Alphonso variety, no need of sieving and you can directly proceed towards cooking after making pulp.

– If Mango is very sweet, then add 1 teaspoon of lemon juice at the end to give little tangy taste.

Kadu Mavina hannina Sasive / Wild Mangoes in coconut and mustard sauce:

Wild mangoes are known as Kadu mavina hannu in our local language. Which is very fibrous, tangy as well as sweet in taste. It has distinct taste, it is widely used in varieties of curries in our region. This particular curry doesn’t need any heating and is a perfect treat for summer. Usually we enjoy this with hot rice.

Ingredients:

Wild mangoes -5-6

Salt – to taste

Jaggery – to taste

Fresh Coconut gratings – 1 bowl

Red chillies – 2

Mustard – 1 tsp

Seasoning: Coconut oil – 1 tsp, mustard – 1 tsp, Red chilli – 1, Curry leaves – little.

Method:

–  Wash wild mangoes, remove top part of the mango, remove outer skin and keep this in a separate vessel. Keep inner fruit part in another vessel.

  Add one cup of water to outer skin, mash nicely, collect pulpy water and add this to fruit. Discard outer remaining skin. Add required amount of jaggery, salt and mix.

  Grind fresh coconut, mustard and red chillies to a fine paste by adding little water.(No need to roast Chillies and mustard)

  Add this ground paste to mango and check for the seasoning. If needed add some more grated jaggery or salt.

  Season by using coconut oil. When it is hot, add mustard, after it splutters, add red chilli and curry leaves, add this to mango curry.

  Enjoy this with hot rice.

NOTE:

-If you don’t have access to wild mango, don’t worry. Pick up any varieties of mango, peel the outer skin and chop the fruit into bite size pieces and proceed with above method.

 

 

 

 

Plantain Upside down Cake:

This is my trial in egg less as well as butter less baking. Here I have used raw flax seed gel as a replace for an egg as well as fat and it worked out just fantastic.

Ingredients:

Finger millet flour/Ragi – 1 cup

Whole wheat flour –½ cup

Sugar – ¾ cup

Mashed banana – 1 cup

Flax gel – ½ cup

Baking powder – ¾ tsp

Cooking soda – ¾ tsp

Salt – ½ tsp

Cinnamon powder – one pinch.

Vanilla essence – 1 tsp

Curd – 1/3 cup to ¼ cup (according to requirement)

For Caramelized base:(Optional)

Brown sugar – ½ cup

Butter – 2 table spoon (chilled)

Banana roundels – As needed.

Method:

How to make flax gel: Take 2 tsp of flax seed, make powder. Put this powder in thick bottomed small pan, add one cup of water and boil until it is thick, slimy and reduced to almost half.

-Now make banana slices (half inch thick), keep it ready.

– Take one baking tin in which you want to bake this cake. Brush some oil at the base. Spread brown sugar uniformly and take butter, make small cubes and place it here and there.

-Place this in a pre-heated oven at 180C for 6 to 8 minutes until the sugar has melted. Remove from the oven, mix this liquid nicely and place banana roundels in regular intervals and keep aside.

– Now Take all dry ingredients like flour, baking powder, baking soda, salt, cinnamon powder and sieve together couple of times or mix using dry wire whisk.

– Now take another bowl, beat all the wet ingredients like, flax gel, vanilla, sugar, mashed banana

-. When it becomes frothy, fold in the dry ingredient mixture. If you feel this batter is too thick, then adjust the consistency by adding curds.

– Pour this ready batter to the cake tin in which you placed banana slices.

-Bake this in a pre-heated ready oven at 180C for 40 to 50 minutes or until done. If you insert knife, it should come out clean.

-Remove once it is done. When it is cool, de-mold and serve.

NOTE:- Here I took caramel which was stuck on the base of the baking dish, put it in a microwave cup, re heated it and poured as a sauce to give saucy texture. (You can see that in the picture)

-If you want to make this as a vegan,avoid caramelized base.

 

Homemade Maaza / Mango Juice:

Hi all. Today I bring to you Homemade Maaza !

Everyone knows what maaza is, but now you can also make it at home without any artificial flavors or preservatives and it tastes exactly the same!

My kids love this very refreshing bottled drink.So, I tried it at home and I make it a point to prepare it every year in Mango season 🙂

Ingredients:

Ripe mangoes –    5

Raw (thothapuri) mango – 1 ½

Sugar – almost 2 ½ cup (according to taste)

Salt – ½ tsp.

Method : –

-Wash Ripe mangos and raw mangoes remove outer skin and chop it. Quantity should be 2:1 (ripe mango will be more and raw mango will be less).

-Now take these chopped Mango pieces in the cooker, add around 2 cups of sugar, little water (up to mango pieces)

-Cook this for two whistles, switch off the gas, when pressure releases, open the lid and cool the mixture.

-When it becomes a little cool, blend this mixture by using hand blender or mixer grinder.

-Now add required amount of water (check thickness while adding ) till you get required amount of thickness like store bought maaza .

  • After achieving required thickness, add salt, check for sweetness, if u feel u need some more sugar, add and mix nicely.
  • After all the adjustment ,take one vessel and sieve this mixture and discard the fiber part.

  • Collect this smooth juice in a clean bottle and keep this for cooling in a fridge. Serve and enjoy this juice after cooling.

  • I got 3 liters of juice with the quantities I specified.

Lemon pudding cake with Fresh Strawberry Sauce:

Soft, melt in a mouth citrusy warm pudding is paired with fresh strawberry sauce. It is a real treat in winter evenings. The basic recipe is from here and I adapted it according to our taste and availability of the ingredients.

Ingredient:

All-purpose flour or Almond flour – ¼ cup

Salt – one pinch

Lemon zest – from one lemon

Eggs -2 (separated)

Butter- 1 tablespoon

Sugar- 2/3 cup

Buttermilk – 2/3 cup

Lemon juice – 2 tablespoons

For Sauce:

Strawberries- 20

Sugar – 2 tablespoon

Method:

  • Combine dry ingredients in one bowl. i.e. All-purpose flour, salt, lemon zest and mix this nicely by using a dry wire whisk.
  • Preheat oven at 160° C . Keep cookie tray inside by putting water. So that the water bath will be ready to bake while preheating.
  • Take 4 pudding moulds and apply some butter or oil and keep aside.
  • In another bowl, beat egg yolks, buttermilk, lemon juice, sugar. Beat until well mixed.
  • Add dry ingredient content to this and keep aside.
  • In another bowl, beat egg whites until you get stiff peaks. It takes almost 2 to 3 minutes of beating.
  • Combine this with a pudding mixture by folding gently by using a wooden or plastic spatula.
  • Divide evenly by filling this into 4 pudding moulds.

  • Bake these filled cups in a hot water bath for 40 minutes or until the top becomes light brown.
  • After placing the cups, check for the water level in the cookie tray (water bath). If it is less, please fill it with little hot water and close the oven door.
  • When it is done, remove from the water bath and cool those cups.

  • Now you can make strawberry sauce or Compote :
  • Chop all the strawberries, Mix in sugar and keep aside for 5 minutes. Churn half of the content in a mixer jar and keep another half as it is. So that you will have some chunks in your sauce and it looks good as well OR to make the compote, cook all these until syrup become bubbly and cool before serving it. 
  • For serving, invert the pudding on a serving plate and pour some strawberry sauce and enjoy.

Note: To invert the pudding, you can use a small knife at the edge and it will release itself from the sides.
