Kantola Palya / Subzi/ dry curry:

Kantola has many names like Spine gourd, Teasel Gourd, phagila, Mada hagala, locally we call this as “Kaadu peere” in Mangalore. Kantola is one of the famous and nutritious vegetable of coastal region and some Eastern parts of states. This monsoon vegetable is loved by all. This resembles a bitter gourd in structure, but not in taste. It is a crunchy mild flavoured vegetable.  It is a great health food as it is rich in proteins, Iron, and antioxidants and low in calories. It is high in fibre too.                  

In my family, we usually relish this in two ways. One is crunchy,  tawa fry form or as a palya. I make palya in two ways. One is garnished with  fresh coconut. Other one is  with coconut, along with little crushed roasted peanut. Both side dishes tastes equally good.

Ingredients:

Kantola – 500 grams

Onion – 1

Garlic – 7 to8

Turmeric – 1 tsp

Tamarind – small gooseberry size.

Red chilli powder – 1 to 2 tsp

Salt – to taste

Jaggery –  to taste

Fresh Coconut – to garnish

For seasoning: Coconut/ Vegetable oil, Mustard, urad dal, chana dal, cumin , curry leaves.

Method:

-Wash Kantola, chop into small slices. Chop onion and crush garlic. Soak tamarind in a cup of water.

– Take one kadai, heat oil, splutter mustard, add urad and chana dal. Fry until it turns red. Add cumin and curry leaves as well as crushed garlic.

-Add chopped onion, add turmeric, fry until onion turns transparent. Add tamarind water, red chilli powder, salt, jaggery.

-When it starts boiling, add chopped Kantola and mix everything , close the lid, and cook in a low flame.

-After water drains, Kantola turns soft, garnish with coconut or coconut as well as crushed roasted peanuts.

Mix everything and cook further 3 more minutes and switch off. Serve as a side dish with rice or roti.

 

 

Mixed vegetable with spinach:

Sweet potato is a versatile veggie and it blends very well with any veggies. Made this side dish to use my little harvest of spinach and Sweet potato by mixing with seasonal favorite cauliflower to make it attractive. 😉 . It is a perfect healthy side dish for Roti’s.

How I do-

Ingredients:

Spinach – one bundle.

Cauliflower florets: one bowl (cleaned, washed)

Sweet potato – one bowl (washed and chopped)

Capsicum -1

Tomato – 2 to 3

Green chillies -2

Ginger – 1”

Oil – 2 tbl sp

Hing – ¼ tsp

Cumin – ½ tsp

turmeric – ½ tsp

Coriander powder – 1 tsp

Salt 

Black pepper – 6, cloves -3, cinnamon – ½ “, cardamom -2

Method:

-Take one bowl of water, add salt, cook sweet potato and drain, keep aside.

-by using this same water blanch cauliflower florets, drain and keep aside.

-Now add chopped spinach to this water, add a pinch of sugar to retain green color and blanch. When it is cool, blend this and keep aside.

– Now make coarse powder of black pepper, clove, cinnamon and cardamom.

-Make a paste of tomato, green chilli and ginger.

-Take one pan add 2 tsp of oil, when it is hot, add capsicum fry a little. Then add blanched cauliflower and sweet potato, toss and keep aside.

-In another tawa add oil, hing, jeera, powdered spices, tomato paste, turmeric, coriander powder, fry till oil leaves from the sides.

-Put spinach paste, check for salt and add tossed veggies. Mix till all the veggies are coated with masala and garnish with chopped coriander leaves.

-Enjoy with any kind of Indian flat breads or roti’s.

 

 

Indian broad beans with ground nut:

It is a very tasty vegetable and is known as Chikdikayi, chapparadavare or Indian broad beans. This subzi/dry curry is one of our favourite and whoever tastes this subzi, usually asks for the recipe. So, I thought of sharing this recipe in my blog as well. I learnt this from our family friend who hails from Gulbarga, Northern part of Karnataka.

How it is made –

Ingredients:

Indian broad beans – 500 Gms

Garlic – 10 -12 cloves

Red chilli powder – 1 to 2 tsp.

Salt

Crushed roasted groundnut – ½ cup

Oil- 2 tbl sp.

Method:

-Remove both side’s fibre and slit open, to see. Slit at the centre and keep aside.

-Now keep one pot of water for boiling, add little salt to it. When it starts boiling, add broad beans including bean as well.

-When it changes colour, drain the water and keep aside.

– Keep one thick bottomed kadai, put oil. When oil becomes hot, add crushed garlic and fry a little. Now add cooked and drained beans.

-Add sufficient amount of salt and red chilli powder and mix nicely. Cook until oil leaves from the sides.

-Now add crushed or roughly powdered ground nut and mix for a while.

-Serve with Chapati/phulka’s or rice.

Note: I usually add ready ground nut chutney powder (which has red chilli powder, salt and garlic)

If you are using chutney powder like me, decrease the amount of salt and red chilli powder while adding at the beginning.
